The heart of incredible India, known as Madhya Pradesh, situated at the central part of India, while sharing the borders with states of (Uttar pradesh, Rajasthan, Gujarat, Maharastra, and Chattisgarh).
gifted with the enormous variety of fruits, vegetables, fish, and Game(animals to hunt, wild animals) .
the soil of the state is an asset to its vegetation and agriculture, the variety of soils found in the state is black soil (Southern part), Alluvial (Northen part), deep and medium Black (western part) and mixed Red and Black Soil(Eastern Part). As, a result the food habits are differ in different regions of Madhya Pradesh, Not only on geographical ground but the food habits are also affected by the cultural and the influence of neighboring states. like of cuisine the state also enjoys the Harmony of people from different religions which is a result of lnvasions and migration of people for work from different states the community of people lives in madhya pradesh is Hindu, Christians, Sikhs, Muslims, Buddhist etc.
HISTORY:- Starting from the stone ages, The ancient civilization often dependent on hunting for food As, per the stone paintings found in Hoshangabad, Bhimbetaka, Bhopal and Rocks near Sagar are some examples. In 2000 BCE, As per records, The ancient civilization said that they are not only dependent upon hunting for food but they also practice Agriculture. The whole format change with the invasion of Aryans into Indian and Madhya Pradesh. after this most prominent and famous rulers ruled Madhya Pradesh for decades and the most jutting ones who also have contributed to the cuisine of Madhya Pradesh are Chandelas, Bundelas, Tomars, Jatts, Marathas, Afghans and Mughals as well as we have already talked about the influence of food by their rulers and Neighboring states.
The food of madhya pradesh is famous for its both vegetarian and Non vegetarian Dishes if you go into the northen parts of Madhya pradesh you will find the dishes in both vegetarian and Non vegetarian version following Below given the Different parts of states with their small part of history
and different dishes and their reciepe:
Bundelkhand: In it's existing period it include the area of (Datia, Chattarpur, Panna, Sagar, Damoh) Part of MP. and (Jhansi, Lalitpur, Mahoba, Jalon, Chitrakoot) which are now the parts of Uttar Pradesh: The region was previously ruled by Chandelas and later on they were been overthrown by Prithvi Raj Chauhan this weakned the rule of Chandelas and this lead to the rise in the power of Bundela Rajput clan on whose name the region is been known the irony is that bundelkhandi cuisine is one of the surviving royal cuisine of madhya pradesh.
some of dishes are influenced by the Rajasthani cuisine. As the use of gram flour is used prominently in this cuisine some of the well known and popular traditional dishes of Bundelkhand are:-
*Ras Kheer:- Pudding made from sugarcane juice and rice.
*Maheri:- Slow cooked millet with buttermilk.
*Lapsi:- Dessert made from chestnut flour and Jaggery or sugar.
*Bundelkhandi Baigan:- Dumplings of raw amla fried and cooked in ghee and mixed with gram flour and fried.
*Birra ki Roti:- Traditional breads made with chana dal and wheat flour.
*Bundelkhandi Chicken:- Its a spicy chicken curry prepration.
*Mahua ki Kheer:- Dessert made with berries of mahua tree with milk and Ghee.

Gwalior:- Is, The northen region of madhya pradesh. Ruled by the famous rulers like Man singh Tomar, Mughals, Marathas and at last came under the power of Britishers, Gwalior is not only famous for its food but also for its Architecture and heritage some of the well known existing examples are Gwalior fort, Jai vilas Palace, Gaus ka Makbara, Teli ka mandir, Sas Bahu ka Mandir and the list goes on. some of the famous dishes of Gwalior are:-
* Gwalia Kabab:- Made up with the marinated mutton.
* Meat Biryani:- Traditional biryani made up with the chicken and mutton meat.
* Paneer Pilaf:- Vegetarian dish made up with Paneer and vegetables.
* Paneer ki Jalebi :- Made with the simple jalebi batter with the use of Paneer.
Bhopal:- 'Bho' means King Bhoja and 'Pal' is the name of dam. It is the capital city of Madhya Pradesh. Located in the northen central part of Madhya pradesh. Earlier ruled by the parmara king Bhoja and have seen the reign of many rulers. As a result, affected the cuisine of madhya pradesh, until the General of Aurangzeb, Dust Muhammad Khan have occupied the land of Bhopal and settled his small city, after the death of Aurangzeb in 1707 in the tension between Mughal dynasty. So, many prominent dishes of Bhopal are influenced by Mughlai cuisine. Bhopal is famous for It's Non-Vegetarian dishes some of the well known are given below:-
*Seekh Kabab:- Made up with the Chicken and mutton meat both.
*Acchar Ghost:- Prepared with Chicken cooked i lot of pickle spices. In some places mutton can be used.
*Keema Pulao:- Another excellent dish prepared with minced meat in Basmati Rice.
*Bhopali Ghost Korma:- This dish is prepared with mutton meat in Indian gravy or O/T gravy.
*Acchar Ghost:- Prepared with Chicken cooked i lot of pickle spices. In some places mutton can be used.
*Keema Pulao:- Another excellent dish prepared with minced meat in Basmati Rice.
*Bhopali Ghost Korma:- This dish is prepared with mutton meat in Indian gravy or O/T gravy.
*Bhopali Paan:- It's an specialty of Bhopal, which have its own variation of Pan.
Bonus:- Some of the dishes from other parts of Madhya Pradesh are Palak puri, Indoori Poha, Mava Bati, Maal pua, Non-vegetarian dish from kadaknath Chicken (A special type of chicken mainly found in parts of Madhya Pradesh and Chattisgarh).
